Squacquerone

A cheese with an ancient history which has always been connected to the rural environment. According to tradition, this cheese was produced and consumed during the winter months because it needed a refrigerated storage.
Among its most influential admirers we mention Cardinal Bellisomi, Bishop of Cesena.
Another great admirer was Luigi Pasquini (1897 – 1977), draftsman, graphic designer, xylographer, writer and publicist, who was also an attentive researcher of the culture of Romagna. From his writings we had the first evidence of the use of this cheese inside Piadina.
The poet Spallicci mentioned this delicious milk product in his poems too.
